Coriander Chicken With Sweet And Sour Sauce

Ingredients
  Whole boneless chicken breasts 24 Ounce, skin removed, split in half
For herb filling
  Finely chopped green onion 1 Tablespoon
  Dried parsley flakes 1 Teaspoon
  Ground coriander 1⁄4 Teaspoon
  Garlic powder 1⁄8 Teaspoon
  Pepper 1⁄8 Teaspoon
  Canned unsweetened pineapple chunks 8 Ounce, drained, juice reserved (1 Can)
  Water 1⁄4 Cup (4 tbs)
  Low sugar orange marmalade 2 Tablespoon
  Cornstarch 1 Tablespoon
  No-salt ketchup 1 Tablespoon
  Reduced sodium soy sauce 2 Teaspoon
  White wine vinegar 1 1⁄2 Teaspoon
  Low sodium instant chicken bouillon 1⁄2 Teaspoon
  Halved seedless green grapes 1⁄2 Cup (8 tbs)
Directions

Pound each chicken breast half to 1/4-inch thickness.
Set aside.
In small bowl, combine all filling ingredients.
Mix well.
Spread about 1 teaspoonful filling over each chicken breast half.
Fold in sides and roll up, enclosing filling.
Place breast seam-side down in 9-inch square baking dish.
Add pineapple chunks to chicken.
Set aside.
