Microwaved Cashew Chicken

Ingredients
  Boneless chicken breasts 2 Pound, cut in to 1 1/2 inch chunks
  Cooking oil 1 Tablespoon
  Cornstarch 1⁄4 Cup (4 tbs)
  Water 1⁄3 Cup (5.33 tbs)
  Soy sauce 2 Tablespoon
  Salt 2 Teaspoon
  Sugar 1 1⁄2 Teaspoon
  Pepper 1 Dash
  Canned water chestnuts 5 Ounce, drained and chopped (1 Can)
  Frozen peas 1⁄2 Cup (8 tbs), thawed
  Thinly sliced celery 1 Cup (16 tbs)
  Canned whole mushrooms 4 Ounce, drained (1 Can)
  Cashews 1⁄2 Cup (8 tbs)
Directions

Preheat browning dish 7 minutes.
Place oil and chicken in dish and MICROWAVE 5 MINUTES on HIGH, stirring once halfway through.
Combine cornstarch and water in small bowl, stir until smooth.
Stir into chicken mixture, along with soy sauce, seasonings, water chestnuts, peas, celery, mushrooms and cashews.
Cover.
MICROWAVE 10 to 15 MINUTES on HIGH, or until vegetables are tender-crisp.
