Tasty Leftover Chicken
|Grilled chicken||1 Cup (16 tbs), finely chopped|
|Cooking oil||1 Tablespoon|
|Breadcrumbs||1⁄2 Cup (8 tbs), powdered fine|
|Eggs||2 , beaten|
|Finley chopped onions||1 Cup (16 tbs)|
|Fresh chopped parsley||2 Tablespoon|
|Crushed black pepper||1⁄2 Teaspoon|
|Garlic powder||1⁄2 Teaspoon|
|Tabasco sauce||2 Dash (Adjust tabasco as needed)|
Take a pan and add 1 tbsp of cooking oil. Add the onions and sauté till soft and golden brown. Keep aside.
Take a bowl and add all the ingredients including the sautéed onions. Refrigerate for an hour. Make croquettes out of the chicken mixture. Roll on breadcrumbs. Grill or deep fry it (as desired). Serve with the dip of your choice.
