|Fresh spinach||1⁄2 Pound, stems removed, washed|
|Scallions||3 , chopped|
|Chicken breasts||6 , cut into 2 inch pieces|
|Mushrooms||6 Ounce, sliced|
|Dry white wine||1 Tablespoon|
|Sour cream||1 Cup (16 tbs)|
|Garlic salt||1⁄4 Teaspoon|
|Swiss cheese||4 Ounce, grated|
Set oven to 350°F
1. Steam chopped spinach until wilted, drain. Place in buttered casserole dish.
2. Melt 2 Tbsp of butter in large skillet and saute onions until golden. Remove onions with slotted spoon, mix in with spinach.
3. Add 1 Tbsp butter to skillet. Brown chicken and remove to warm plate. Saute mushrooms in remaining butter and remove to plate with chicken.
4. Add wine to pan and slowly add sour cream and stir until hot. Add chicken, mushrooms, and garlic powder. Stir and heat through. Pour onto spinach, top with Swiss cheese and bake uncovered at 350°F for 20 to 30 minutes.
