Spiced Chicken Cubes

Ingredients
  Onion 1⁄2 Medium, chopped
  Garlic 3 Clove (15 gm), minced
  Corn oil/Safflower oil 2 Tablespoon
  Red wine vinegar 2 Tablespoon
  Catsup 2 Tablespoon
  Cumin 1 1⁄2 Teaspoon, ground
  Paprika 1 1⁄2 Teaspoon
  Fresh cilantro/1 teaspoon dried coriander, ground 2 Teaspoon, minced (coriander)
  Ginger 1⁄4 Teaspoon, ground
  Black pepper 1⁄4 Teaspoon
  Cayenne pepper 1⁄8 Teaspoon
  Boneless skinless chicken/Turkey breast 1 1⁄2 Pound, uncooked, cut into bite-sized pieces
  Canned whole water chestnuts 16 Ounce, drained and cut into halves (2 cans, 8 ounces each)
  Lettuce leaves 4
Directions

In a medium glass bowl combine onion and garlic.
Add oil, vinegar, catsup, cumin, paprika, cilantro, ginger and peppers; mix well.
Add chicken; mix well.
Marinate for several hours.
Preheat oven to 350 degrees.
Drain chicken; reserving marinade.
Skewer 1 piece chicken and 1 water chestnut half onto each toothpick.
In a shallow baking dish place chicken cubes.
Pour reserved marinade over chicken cubes.
Bake for 10 minutes; drain.
On a serving plate arrange lettuce leaves.
Arrange chicken on prepared plate.
