Chilli Chicken

Ingredients
  Spring chicken 2
  Wine 2 Tablespoon
  Egg whites 2
  Cornflour 2 Teaspoon
  Green chillies 10 , cut finely
  Sugar 1 Teaspoon
  Salt 1 Teaspoon
  Chopped garlic 2 Teaspoon
  Soya sauce 4 Tablespoon
  Chicken stock 1 1⁄2 Cup (24 tbs)
  Chili garlic sauce 2 Teaspoon
  Cornflour 1 Tablespoon, mixed with 3 tablespoon water
  Oil 8 Tablespoon
  Shredded lettuce 2 Cup (32 tbs)
Directions

Clean and cut chicken into 1" cubes.
Add 1 tablespoon wine, egg whites and cornflour.
Mix well, and set aside.
Heat 6 tablespoons oil and fry the chicken until light golden colour.
Remove from fire and clean the frying pan.
Heat the rest of the oil and fry the chillies for 2 minutes, stirring well.
Add fried chicken, sugar, wine, stock, garlic, salt and soya sauce.
Cook for another 10 minutes, stirring all the time.
Add chilli-garlic sauce and cornflour mixture.
Simmer until sauce thickens.
Serve with lettuce.
