Kona Chicken in a Coconut
|Chopped tomato||1 Teaspoon|
|Chopped bell pepper||1 Teaspoon|
|Chopped pineapple||1 Teaspoon|
|Trader vics susu curry sauce||2 Cup (32 tbs)|
|Cooked cubed chicken meat||1 Cup (16 tbs)|
|Meat sauce||1 Dash (Bottled)|
|Seasoned mashed potatoes||1⁄2 Cup (8 tbs)|
|Hollandaise sauce||1 Tablespoon|
Mix all ingredients except potatoes and Hollandaise; heat.
Fill coconut shell (or 1-quart casserole) with this mixture.
Decorate sawed-off section of husk with hot mashed potato squeezed through a pastry tube.
Cover curry mixture with a tablespoon or so of Hollandaise sauce.
Bake in very hot oven (450°) 10 to 12 minutes.
Serve with fluffy steamed rice.
