Kona Chicken In A Coconut

Ingredients
  Chopped tomato 1 Teaspoon
  Chopped bell pepper 1 Teaspoon
  Chopped pineapple 1 Teaspoon
  Trader vics susu curry sauce 2 Cup (32 tbs)
  Cooked cubed chicken meat 1 Cup (16 tbs)
  Meat sauce 1 Dash (Bottled)
  Salt To Taste
  Seasoned mashed potatoes 1⁄2 Cup (8 tbs)
  Hollandaise sauce 1 Tablespoon
Directions

Mix all ingredients except potatoes and Hollandaise; heat.
Fill coconut shell (or 1-quart casserole) with this mixture.
Decorate sawed-off section of husk with hot mashed potato squeezed through a pastry tube.
Cover curry mixture with a tablespoon or so of Hollandaise sauce.
Bake in very hot oven (450°) 10 to 12 minutes.
Serve with fluffy steamed rice.
