Stuffed Rolled Chicken Breasts
|Boneless chicken breasts||2 Pound (4 Large Ones)|
|Mushrooms||1 Cup (16 tbs), chopped|
|Chopped onion||1 Cup (16 tbs)|
|Instant chicken bouillon||1 Teaspoon|
|Hot water||1 Cup (16 tbs)|
|Seasoned stuffing mix||3 Cup (48 tbs)|
|Dairy sour cream||1 Cup (16 tbs)|
|Canned cream and mushroom soup||10 3⁄4 Ounce (1 Can, Undiluted)|
In a 2-quart measure or a mixing bowl, MICROWAVE mushrooms, onion and butter on HIGH for 2 to 3 MINUTES, or until onions are transparent.
Add chicken bouillon, hot water and stuffing mix.
Lightly pound chicken breasts so they lie flat.
Place a small roll of stuffing in the center of each chicken breast.
Roll the chicken breasts around the stuffing.
Place chicken breasts seam side down in the center of a 1 1/2-quart utility dish.
Place remaining stuffing along the sides of the dish.
In a small bowl, combine sour cream and mushroom soup.
Pour the soup mixture evenly over the chicken breasts and stuffing.
Sprinkle with paprika.
Cover tightly with plastic wrap.
PROGRAM TO MICROWAVE on HIGH for 5 MINUTES, then on '5'for 5 MINUTES.
