Fruit Stuffed Cornish Hens

Ingredients
  Sliced green onion 2 Tablespoon
  Finely chopped celery 2 Tablespoon
  Water 2 Teaspoon
  Low sodium instant chicken bouillon granules 1⁄2 Teaspoon
  Poultry seasoning 1⁄2 Teaspoon
  Pepper 1⁄8 Teaspoon
  Whole wheat bread slice 1 , torn into small pieces
  Chopped dried apricots 1⁄4 Cup (4 tbs)
  Chopped pitted prunes 1⁄4 Cup (4 tbs)
  Raisins 1 Tablespoon
  Chopped almonds 1 Tablespoon
  Cornish hens 3 Pound (2 Birds Of 1 1/2 Pound Each)
For glaze
  Dark corn syrup 2 Teaspoon
  Reduced sodium soy sauce 1 Teaspoon
  Pepper 1 Dash
Directions

In 1-quart casserole, combine onion, celery, water, bouillon, poultry seasoning and pepper.
Cover.
Microwave at High for 1 to 2 minutes, or until vegetables are tender-crisp.
Stir.
Add bread, apricots, prunes, raisins and almonds.
Stir.
Fill cavity of Cornish hens with stuffing.
Secure legs together with string.
In small bowl, blend all glaze ingredients.
Brush hens with glaze.
Arrange Cornish hens breast-side up on roasting rack.
Microwave at High for 17 to 20 minutes, or until legs move freely and juices run clear, rearranging hens once or twice.
Brush with any remaining glaze after half the time.
Let stand, covered, for 5 minutes.
