Fruited Chicken Breasts
|Chicken breast halves||6 , skinned and boned|
|Corn oil/Margarine||1 Tablespoon|
|Firm baking apples||3 Cup (48 tbs), unpeeled and thinly sliced|
|Cider||1⁄3 Cup (5.33 tbs)|
|Granulated sugar||1⁄4 Cup (4 tbs)|
|Lemon juice||1 Tablespoon|
|Grated lemon rind||1 1⁄2 Teaspoon|
|Worcestershire sauce||1 Teaspoon|
|Cream style horseradish||1 Teaspoon, prepared|
Preheat oven to 350 degrees.
In a shallow baking pan arrange chicken.
Dot with margarine.
Sprinkle with cardamom, salt and pepper.
Bake for 1 hour or until tender.
In a medium saucepan combine apples, cider, sugar, lemon juice and rind, Worcestershire sauce and horseradish.
Simmer over medium-low heat until apples are tender.
Pour over chicken.
Bake just until heated through.
