Chicken With Pineapple

  Chicken legs 10 Ounce (300 Gram)
For marinade
  Soy sauce 1 Tablespoon
  Sherry 1 Teaspoon
  Pineapple slices 2 , cut in to chunks
  Onion 1 Small, cut in quarters
  Raisins 2 Teaspoon
  Pineapple juice 2 Tablespoon
  Water 7 Tablespoon
Thickening paste:
  Cornflour 1 Teaspoon
  Water 2 Teaspoon
  Sesame oil 2 Teaspoon
  Chopped coriander/Chopped parsley 2 Tablespoon

Chop the chicken into 3-cm (1 -in) pieces, marinate for 30 minutes.
Deep-fry the chicken for 2 minutes, reserving the marinade.
Drain the chicken well.
Put the onion, reserved marinade, pineapple juice and water into a saucepan with the chicken and bring to the boil.
Then turn down the heat and simmer for 30 minutes.
Remove the chicken to a warmed serving dish.
Add the pineapple chunks and raisins to the saucepan and simmer for another 5 minutes.
Thicken with the cornflour paste, add the sesame oil and chopped coriander and serve.
