Citrus Marinated Chicken
|Lemon juice||1⁄4 Cup (4 tbs)|
|Soy sauce||1 Tablespoon|
|Water||1 1⁄4 Cup (20 tbs)|
|Garlic powder||1⁄8 Teaspoon|
|Grated orange peel||1 Teaspoon|
|Bone in chicken breasts||2 (Whole)|
|Snipped fresh parsley||1 Tablespoon|
In 2-cup measure combine lemon juice, soy sauce, water, pepper, garlic powder and orange peel to make marinade.
Microwave at High 1 to 2 minutes, or until hot.
Place with chicken in plastic bag.
Refrigerate 1 to 2 hours.
Arrange chicken in 12 x 8-in baking dish with meatiest portions to outside.
Top with orange slices.
Pour marinade over chicken.
Cover with wax paper.
Microwave at High 13 to 18 minutes, or until meat is tender and no longer pink, rearranging and basting twice.
Garnish with parsley.
