Easy Maryland Fried Chicken
|Milk||1 1⁄4 Cup (20 tbs)|
|Fine cracker crumbs||3⁄4 Cup (12 tbs)|
|Broiler fryer chicken||3 Pound, cut up (1 Piece, Ready To Cook)|
Combine egg and 1/4 cup of the milk.
Mix cracker crumbs with 1/2 teaspoon salt and dash pepper.
Dip chicken pieces into egg mixture; roll in crumbs.
Heat shortening in heavy 12-inch skillet. (Electric skillet 350°.)
Brown the chicken pieces slowly, turning with tongs.
Add remaining 1 cup milk.
Reduce heat (220°); cover tightly and simmer 35 minutes.
Uncover; cook till tender, about 10 minutes more.
From pan drippings, make Cream Gravy.
