Chicken, Country Style

  Chicken 4 Pound, cut up (1 Bird)
  Salt 3 Teaspoon
  Fat/Salad oil 4 Tablespoon
  Pared potatoes 6 Medium
  Onions 6 Medium
  Scraped carrots 6 Medium
  Seeded green peppers 2 Large, cut in 1/2 inch strips
  Granulated sugar 1 Tablespoon
  Pepper 1⁄4 Teaspoon
  Canned tomatoes 20 Ounce (1 No.2 Can, 2 1/2 Cups)
  Boiling water 1 Cup (16 tbs)
  Flour 4 Tablespoon
  Cold water 6 Tablespoon

Clean, wipe, and singe chicken.
Then roll in the 1/2 c flour which has been mixed with 1/2 teasp of the salt.
Brown in the fat in a Dutch oven.
Remove pieces as they brown.
Place 2/3 of the raw vegetables in bottom of a Dutch oven.
Lay chicken on top and add remaining raw vegetables.
Combine sugar, pepper, tomatoes, remaining 2 1/2 teasp salt, boiling water.
Pour into Dutch oven.
Cover; bake,in moderately hot oven of 400°F for 1 hr., 45 min., or until tender.
Remove chicken and vegetables to a hot platter and keep warm.
Stir into remaining gravy the 4 tablesp flour and cold water which have been blended together.
Cook, stirring constantly, until smooth and thickened.
Pour over chicken and serve at once.
