Chicken And Sardine Acapulco

Ingredients
  Diced onion 1 Ounce
  Garlic cloves 1 Small, minced
  Tomato 1 Medium, chopped
  Chicken stock 1⁄4 Cup (4 tbs)
  Chopped fresh parsley 1 Teaspoon
  Cooked chicken 2 Ounce, diced
  Drained canned sardines 2 Ounce, flaked
  Hot chili pepper 1⁄2 , seeded and minced
  Shredded lettuce 1⁄2 Cup (8 tbs) (To Garnish)
  Salt To Taste
  Pepper To Taste
Directions

Brown onion and garlic in nonstick skillet.
Add tomato, stock, and parsley, and cook for 10 minutes.
Add chicken, sardines, and chili pepper.
Simmer uncovered about 3 minutes or until chicken is heated.
Season with salt and pepper.
Serve garnished with lettuce.
