Chicken And Sardine Acapulco
|Diced onion||1 Ounce|
|Garlic cloves||1 Small, minced|
|Tomato||1 Medium, chopped|
|Chicken stock||1⁄4 Cup (4 tbs)|
|Chopped fresh parsley||1 Teaspoon|
|Cooked chicken||2 Ounce, diced|
|Drained canned sardines||2 Ounce, flaked|
|Hot chili pepper||1⁄2 , seeded and minced|
|Shredded lettuce||1⁄2 Cup (8 tbs) (To Garnish)|
Brown onion and garlic in nonstick skillet.
Add tomato, stock, and parsley, and cook for 10 minutes.
Add chicken, sardines, and chili pepper.
Simmer uncovered about 3 minutes or until chicken is heated.
Season with salt and pepper.
Serve garnished with lettuce.
