Fruited Glazed Chicken
|Peach preserves/Apricot preserves||1⁄4 Cup (4 tbs)|
|Browning sauce||1⁄4 Teaspoon|
|Chicken||3 Pound, cut into serving pieces|
|Frozen mixed fruit||10 Ounce, thawed (1 Package)|
|Lemon juice||1⁄2 Teaspoon|
|Ground ginger/Cinnamon||1 Dash|
Set Power Select at HIGH.
In small glass bowl, combine preserves and browning sauce; heat 1/2 to 1 minute.
In oblong baking dish, arrange chicken, meatier portions toward edge of dish; brush with 1/2 preserves.
Heat, covered with wax paper, 12 to 13 minutes, brushing with remaining preserves halfway through heating.
Remove chicken to serving platter; let stand, covered, 7 minutes.
Meanwhile, drain liquid, reserving 1/2 cup.
In baking dish, combine reserved liquid and remaining ingredients.
Heat 3 to 4 minutes or until sauce is slightly thickened, stirring twice; serve over chicken.
