Classic Chicken Divan With Heavy Cream
|Fresh broccoli/Two 10 ounce packages frozen broccoli spears||2 Bunch (200 gm)|
|Butter||1⁄4 Cup (4 tbs)|
|Enriched flour||6 Tablespoon|
|Chicken broth||2 Cup (32 tbs)|
|Heavy cream||1⁄2 Cup (8 tbs)|
|Chicken breasts||3 , cooked and thinly sliced|
|Parmesan cheese||1 Tablespoon, shredded|
Cook broccoli in boiling salted water till tender.
Place spears crosswise in 12 x 7 1/2 x 2-inch baking dish.
Melt butter in saucepan; blend in flour.
Add chicken broth all at once and cook, stirring constantly, till mixture thickens.
Stir in cream, sherry, salt, and dash pepper.
Pour half the sauce (1 2/3 cups) over the broccoli.
Top with chicken slices.
To remaining sauce, add 1/4 cup Parmesan cheese; pour over chicken and sprinkle with additional Parmesan cheese.
Bake at 350° 20 minutes or till hot.
Then broil just till sauce is golden brown.
Trim with spiced peaches.
