Savory Pineapple Chicken
|Rosemary leaves||2 Teaspoon, crushed|
|Black pepper||1⁄2 Teaspoon|
|Broiler fryer chicken||6 Pound, cut up (Two 3 Pound Pieces)|
|Tiny white onions||10|
|Canned unsweetened pineapple juice||1 1⁄4 Cup (20 tbs)|
About 1 hour and 15 minutes before serving: Preheat oven to 400°F.
Mix rosemary, salt, pepper; rub into chicken.
Arrange chicken, skin-side up, in 13" by 9" by 2" baking dish.
Scatter onions over chicken; sprinkle with ginger, pour on pineapple juice, sprinkle with paprika.
Bake, uncovered, 40 minutes or until fork-tender.
