Chicken On Scalloped Corn
|Cream style corn||16 Ounce (1 Can)|
|Saltine cracker crumbs||1 Cup (16 tbs), divided|
|Milk||1⁄2 Cup (8 tbs)|
|Chopped green onion||1⁄2 Cup (8 tbs)|
|Broiler fryer chicken pieces||3 Pound, skin removed if desired|
In 12x8-in baking dish combine corn, 3/4 cup cracker crumbs, milk, onion, egg and flour.
Arrange chicken pieces on top, bony side up.
Microwave at High 10 minutes.
Stir com mixture well.
Turn over and rearrange chicken pieces, placing least done parts to outside of dish.
Combine remaining cracker crumbs and paprika in small bowl.
Sprinkle over chicken.
Microwave 10 to 15 minutes, or until chicken is done and corn is set.
Excess fat may be drained.
