Skewered Marinated Chicken

  Sliced onion 1⁄2 Cup (8 tbs)
  Cider vinegar 1⁄4 Cup (4 tbs)
  Soy sauce 1 Teaspoon
  Peppercorns 5 , crushed
  Garlic 1 Clove (5 gm), split
  Bay leaf 1
  Water 1 Cup (16 tbs)
  Skinned boned chicken breasts 12 Ounce, cut into large pieces
  Onion 4 Ounce, cut into 4 wedges (1 Onion, 1 Cup)
  Green bell pepper 1 Medium, seeded and cut into 4 pieces
  Cherry tomatoes 6
  Salt 1⁄4 Teaspoon
  Coarsely ground pepper 1 Dash

Combine first 6 ingredients in bowl; add water and stir to combine.
Add the chicken, cover, and refrigerate overnight.
Remove chicken and discard marinade.
Thread each of two 12-inch skewers with 6 ounces chicken pieces, 2 onion wedges, 2 green pepper pieces, and 3 cherry tomatoes, alternating chicken with vegetables.
Sprinkle with salt and pepper.
Place on rack in broiler pan and broil about 8 minutes; turn and broil 5 to 8 minutes longer or until chicken is tender.
