Skewered Marinated Chicken
|Sliced onion||1⁄2 Cup (8 tbs)|
|Cider vinegar||1⁄4 Cup (4 tbs)|
|Soy sauce||1 Teaspoon|
|Peppercorns||5 , crushed|
|Garlic||1 Clove (5 gm), split|
|Water||1 Cup (16 tbs)|
|Skinned boned chicken breasts||12 Ounce, cut into large pieces|
|Onion||4 Ounce, cut into 4 wedges (1 Onion, 1 Cup)|
|Green bell pepper||1 Medium, seeded and cut into 4 pieces|
|Coarsely ground pepper||1 Dash|
Combine first 6 ingredients in bowl; add water and stir to combine.
Add the chicken, cover, and refrigerate overnight.
Remove chicken and discard marinade.
Thread each of two 12-inch skewers with 6 ounces chicken pieces, 2 onion wedges, 2 green pepper pieces, and 3 cherry tomatoes, alternating chicken with vegetables.
Sprinkle with salt and pepper.
Place on rack in broiler pan and broil about 8 minutes; turn and broil 5 to 8 minutes longer or until chicken is tender.
