Chicken Consomme

Ingredients
  Boiling fowl butter 4 Pound (2 Kilogram)
  Cold water 1 1⁄2 Liter (6 Cups)
  Carrot 1 , sliced
  Celery stalks 2
  Garlic 1 Clove (5 gm), chopped
  Bay leaf 1⁄2
  Peppercorns 1⁄4 Teaspoon
  Thyme 1⁄4 Teaspoon
  Coarse salt 15 Milliliter (1 Tablespoon)
  Onion 1 , finely minced
Directions

Cut up the chicken and brown the pieces lightly in a little butter.
Transfer to a soup kettle and add the remaining ingredients.
Cover and bring to a boil.
Simmer for 1 1/2 to 2 hours or until the chicken is tender.
Strain the same way as the basic beef consomme.
Keep refrigerated.
