Bourbon chicken is one of my favorite mall foods, you know, the kind of food you get only when at the mall?
I knew I had to find a way to prepare it in a much lower carb way. Here are the results of my attempt. Its a hit!
Chicken breast | 1 1/2 Pound , cut in bit size pieces | |
Chopped garlic | 1 1/2 Clove (7.5 gm) | |
Ginger paste | 1/2 Teaspoon | |
Red pepper flakes | 1/2 Teaspoon (Use Less For A Less Spicy Dish) | |
Apple juice sweetened with splenda | 1/2 Cup (8 tbs) (Healthy Balance Apple Juice) | |
Splenda brown sugar blend | 1 1/2 Tablespoon | |
Sugar free ketchup | 1 1/2 Tablespoon | |
Rice vinegar | 1 1/2 Tablespoon | |
Low sodium soy sauce | 1 1/2 Tablespoon | |
Water | 1/2 Cup (8 tbs) | |
Olive oil | 1 1/2 Tablespoon | |
Bourbon | 1 1/2 Tablespoon | |
Xanthan gum | 1/2 Teaspoon (Optional) |
Heat oil in pan and add chicken pieces. Cook for about 6 minutes then remove from pan.
In a bowl mix remaining ingredients except the xanthan gum.
In the same pan at the liquid mixture and bring to slow bowl for about 4 minutes.
Add the chicken and cook covered on medium low heat for about 15 minutes.
*If mixture is not think enough you can add the xanthan gum to thicken.
Serve with cauliflower fried rice. Enjoy!
