Low Carb Boiled Bourbon Chicken

Bourbon chicken is one of my favorite mall foods, you know, the kind of food you get only when at the mall?
I knew I had to find a way to prepare it in a much lower carb way. Here are the results of my attempt. Its a hit!

Ingredients

Chicken breast 1 1/2 Pound , cut in bit size pieces
Chopped garlic 1 1/2 Clove (7.5 gm)
Ginger paste 1/2 Teaspoon
Red pepper flakes 1/2 Teaspoon (Use Less For A Less Spicy Dish)
Apple juice sweetened with splenda 1/2 Cup (8 tbs) (Healthy Balance Apple Juice)
Splenda brown sugar blend 1 1/2 Tablespoon
Sugar free ketchup 1 1/2 Tablespoon
Rice vinegar 1 1/2 Tablespoon
Low sodium soy sauce 1 1/2 Tablespoon
Water 1/2 Cup (8 tbs)
Olive oil 1 1/2 Tablespoon
Bourbon 1 1/2 Tablespoon
Xanthan gum 1/2 Teaspoon (Optional)

Directions

Heat oil in pan and add chicken pieces. Cook for about 6 minutes then remove from pan.

In a bowl mix remaining ingredients except the xanthan gum.

In the same pan at the liquid mixture and bring to slow bowl for about 4 minutes.

Add the chicken and cook covered on medium low heat for about 15 minutes.

*If mixture is not think enough you can add the xanthan gum to thicken.

Serve with cauliflower fried rice. Enjoy!
