Chicken Apple Saute

Ingredients
  Corn oil/Safflower oil 1 Tablespoon
  Chicken breasts 1 Pound, skinned, boned and cut into strips
  Celery 1 Cup (16 tbs), diagonally sliced
  Green bell pepper 1 Medium, sliced lengthwise
  Onion 1 Medium, sliced lengthwise
  Golden delicious apples 1 , cored and sliced
  Apple juice 1⁄2 Cup (8 tbs)
  White wine vinegar 1 Tablespoon
  Cornstarch 1 Tablespoon
  Lite soy sauce 1 Teaspoon
Directions

In a wok or nonstick skillet heat oil over medium heat.
Add chicken.
Saute over medium-high heat until cooked through.
Remove chicken.
Add celery, green pepper and onion.
Stir-fry until tender-crisp.
Add chicken and apple.
Stir-fry for 1 minute.
In a small bowl combine apple juice, vinegar, cornstarch and soy sauce.
Add to chicken.
Cook until thickened, stirring constantly.
