Chicken Apple Saute
|Corn oil/Safflower oil||1 Tablespoon|
|Chicken breasts||1 Pound, skinned, boned and cut into strips|
|Celery||1 Cup (16 tbs), diagonally sliced|
|Green bell pepper||1 Medium, sliced lengthwise|
|Onion||1 Medium, sliced lengthwise|
|Golden delicious apples||1 , cored and sliced|
|Apple juice||1⁄2 Cup (8 tbs)|
|White wine vinegar||1 Tablespoon|
|Lite soy sauce||1 Teaspoon|
In a wok or nonstick skillet heat oil over medium heat.
Saute over medium-high heat until cooked through.
Add celery, green pepper and onion.
Stir-fry until tender-crisp.
Add chicken and apple.
Stir-fry for 1 minute.
In a small bowl combine apple juice, vinegar, cornstarch and soy sauce.
Add to chicken.
Cook until thickened, stirring constantly.
