|Stewing chicken||5 Pound, cut up|
|Water||4 Cup (64 tbs)|
|Onion||1 Medium, sliced|
|Celery stalk||1 Medium, chopped|
In large saucepan, combine all ingredients.
Cover and simmer 2 to 3 hours until tender.
Remove chicken; strain broth.
Cool chicken slightly; skim off all fat.
Remove skin and bones; cut into pieces.
Cover and refrigerate.
Use within two days or wrap tightly and freeze.
