Easy Chicken Gumbo
|Cut okra||1 Pound, drained (1 Can)|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Chopped green pepper||1⁄4 Cup (4 tbs)|
|Chicken broth||4 Cup (64 tbs) (Consomme)|
|Canned tomatoes||1 Pound (1 Can)|
|Bay leaf||1 Small|
|Diced cooked chicken||1 Cup (16 tbs)|
|Minced parsley||1 Tablespoon|
|Hot cooked rice||3 Cup (48 tbs)|
In large saucepan, cook and stir okra, onion, and green pepper in butter over low heat until onion is tender.
Stir in consomme, tomatoes, and bay leaf; simmer 15 min.
Season to taste with salt and pepper.
Stir in chicken and parsley; heat through.
Serve in bowls with scoops of rice.
