Favorite Fried Chicken
|All purpose flour||1⁄3 Cup (5.33 tbs)|
|Ready to cook broiler fryer chicken||3 Pound, cut up|
|Cooking oil||2 Quart|
Combine flour, salt, paprika, and pepper in paper or plastic bag.
Add 2 or 3 pieces of chicken at a time; shake well.
Dry on rack.
Heat oil 1/4 inch deep in 12-inch skillet. (Electric skillet 350°.)
Brown the chicken slowly, turning with tongs.
Reduce heat (220°); cover tightly and cook till tender, 30 to 40 minutes.
Uncover last 10 minutes.
