Zesty Chicken Wings

Ingredients
  Chicken wings 12
  Butter 15 Milliliter (1 Tablespoon)
  Sliced mushrooms 125 Milliliter (1/2 Cup)
  Chopped fresh spinach 125 Milliliter (1/2 Cup)
  Tomato juice 500 Milliliter (2 Cups)
  Sauce thickener 15 Milliliter (1 Tablespoon, Store Brought, For White Sauce)
  Garlic 1 Clove (5 gm), minced
  Pepper To Taste
  Rice 750 Milliliter, cooked (3 Cups)
Directions

Preheat the oven to 400°F (200°C).
Place the chicken wings on a cookie sheet and bake for approximately 12 minutes.
In a non-stick pan, melt the butter.
Saute the mushrooms over medium-high heat for 2 minutes and add the spinach.
Mix well.
Add the tomato juice and slightly reduce.
Thicken with the sauce thickener, stirring continuously.
Season with garlic and pepper to taste.
Pour the sauce on four plates, and top with the chicken wings.
For a main course serve the chicken wings on a bed of rice.
