Batter Fried Chicken

Ingredients
  Ready to cook broiler fryer chicken 2 1⁄2 Pound, cut up
  Pancake mix 1 Cup (16 tbs)
  Salt 1⁄2 Teaspoon
  Water 3⁄4 Cup (12 tbs)
  Cooking oil 2 1⁄2 Cup (40 tbs)
Directions

Simmer chicken in salted water for 20 minutes; drain.
Combine pancake mix and salt; stir in water.
Beat 2 minutes.
Dip chicken in batter; drain well on rack over waxed paper.
In heavy skillet at least 3 inches deep, heat oil 1 1/4 inches deep to 350°.
Regulate heat so chicken fries at about 325°.
Fry a few pieces at a time till golden, about 5 minutes.
Drain.
