Fruited Cornish Game Hens
|Cornish game hens||2 Pound (2 Whole, 1 Pound Each)|
|Sliced canned peaches||1 Cup (16 tbs), drained, syrup reserved|
|Sliced canned pears||1 Cup (16 tbs), drained, syrup reserved|
|Strong chicken broth||1 Cup (16 tbs)|
|Syrup from peaches/Syrup from pears / both||1⁄2 Cup (8 tbs)|
|Lemon juice||2 Tablespoon|
|Ground ginger||1 Teaspoon|
1. Arrange game hens breast-side-up in a 10-inch round baking dish. Cover with wax paper. Microwave at Cook Cycle 1 (power level 10) for 18 minutes, turning the game hens over after 9 minutes. Drain and turn hens breast-side-up again.
2. Combine remaining ingredients in a 1 1/2-quart mixing bowl and blend well. Pour fruit mixture over game hens. Cover. Microwave at Cook Cycle 2 (power level 5) for 13 to 16 minutes, or until sauce is thickened and poultry is fully cooked, stirring once. Let stand, covered, 5 minutes before serving.
