|Tomato slices||4 Large|
|Minced fresh basil||2 Tablespoon|
|Garlic||1 Clove (5 gm), minced|
|Boneless skinless chicken breast halves||2|
|Angel hair pasta||4 Ounce (Fresh)|
|Minced fresh parsley||1 Teaspoon|
|Ground black pepper||1 Pinch|
Tear off two (10" X 14") sheets of parchment.
Fold each in half and trim the edges to form a half-moon shape.
Open the paper and coat the top side with no-stick spray.
Place two tomato slices, slightly overlapped, near the crease on each piece of paper.
In a small bowl, combine 4 teaspoons of the basil with the garlic.
Divide the mixture among the tomato slices.
Place one chicken breast half on top of the tomatoes on each wrapper.
Fold the papers in half and crimp the edges to seal each packet tightly.
Place the packets on a plate.
Microwave on high for 6 minutes.
Let stand for 2 minutes.
Cook the pasta in a large pot of boiling water until just tender, about 3 minutes for fresh angel hair.
Drain and toss with the margarine or butter, parsley, pepper, and the remaining 2 teaspoons basil.
To serve, cut open the packets.
Transfer the chicken to dinner plates and serve with the pasta.
