Chicken Breasts With Beer

  Chicken breast halves 4
  Butter 50 Milliliter (1/4 Cup)
  Beer 250 Milliliter (1 Cup)
  Chicken stock 250 Milliliter (1 Cup)
  Bay leaf 1
  All purpose flour 25 Milliliter (2 Tablespoon)
  Butter 25 Milliliter (2 Tablespoon)
  Salt To Taste
  Pepper To Taste

Season the chicken and sear with butter in a frying pan over medium heat for 10 minutes.
Add the beer, chicken stock, bay leaf and sorrel.
Cover and cook over low heat for 35 minutes.
In the meantime, mix together the butter and flour.
Once the breasts are cooked, remove them from the sauce.
Incorporate the butter and flour mixture and stir until the sauce thickens.
Adjust the seasoning to taste, and pour the sauce over the breasts and serve.
