Chicken With Black Beans

Ingredients
  Chicken 4 Ounce (125 Gram)
For marinade
  Salt 1⁄2 Teaspoon
  Sherry 1 Teaspoon
  Egg white 2 Teaspoon
  Cornflour 2 Teaspoon
  Garlic 2 Clove (10 gm), chopped
  Salted black beans 1 Tablespoon, chopped
  Dried mushrooms 3 , soaked
  Green pepper 1 Small
  Sherry 1⁄2 Teaspoon
  Sugar 1⁄2 Teaspoon
  Black pepper 1 Pinch
  Soy sauce 2 Tablespoon
  Sesame oil 1⁄2 Teaspoon
  Water 4 Tablespoon
  Monosodium glutamate 1⁄2 Teaspoon
  Cornflour 1 1⁄2 Teaspoon
  Water 2 Teaspoon
Directions

Cut the chicken into 4-cm (1 1/2-in) cubes and marinate for 30 minutes.
De-seed the pepper and cut into 3-cm (1 -in) pieces.
Cut the pre-soaked mushrooms into quarters; discard the stems.
Deep-fry the chicken for 3 minutes, remove and drain well.
Heat 1 tablespoon of oil and stir-fry the mushrooms and pepper for 30 seconds, then remove from the pan.
Add another tablespoon of oil, if necessary, and stir-fry the black beans and garlic for 30 seconds.
Add the chicken, vegetables and seasoning sauce and bring to the boil.
Thicken with the cornflour paste and serve.
