Chicken Cheese Puffs
|Diced cooked chicken||2 Cup (32 tbs)|
|Mayonnaise||1 Cup (16 tbs)|
|Shallots||2 Large, minced|
|Dried basil||1⁄4 Teaspoon, crumbled|
|Dried thyme||1⁄4 Teaspoon, crumbled|
|Ground pepper||To Taste|
|Grated cheese/Fontina gruyere / swiss cheese||3⁄4 Cup (12 tbs)|
|Parmesan cheese||1⁄2 Cup (8 tbs), grated|
|Rye bread slices||3|
Preheat oven to 350°F.
Combine first 3 ingredients in medium bowl.
Blend in herbs and seasonings.
Add Fontina, Gruyere or Swiss cheese and 2 tablespoons Parmesan, blending well.
Slice bread in half.
Spread mixture evenly over tops.
Arrange on baking sheet.
Sprinkle with remaining Parmesan and bake until lightly browned, about 10 minutes.
