Oven Barbecued Chicken With Vegetables
|Diced celery||2 Cup (32 tbs)|
|Diced carrots||2 Cup (32 tbs)|
|Diced onion||4 Ounce|
|Broiling chicken||3 Pound, skinned and cut into quarters (1 Chicken, 2 1/2 To 3 Pound)|
|Catsup||1⁄4 Cup (4 tbs)|
|Prepared mustard||2 Tablespoon|
|Poultry seasoning||To Taste|
In a 2-quart shallow casserole, combine celery, carrots, and onion.
Season chicken pieces and place over vegetables.
Combine catsup and mustard and pour evenly over chicken.
Bake at 375°F.
for 1 hour or until chicken is tender.
Weigh portions of chicken and divide vegetables and sauce evenly.
