Creamed Chicken De Luxe
|Butter/Margarine / fat / salad oil||5 Tablespoon|
|Sliced fresh mushrooms||2⁄3 Cup (10.67 tbs)|
|Chicken broth||1 1⁄3 Cup (21.33 tbs)|
|Light cream/Top milk||1⁄2 Cup (8 tbs)|
|Cut up cooked chicken||1 1⁄3 Cup (21.33 tbs)|
|Egg yolks||2 , beaten|
Melt the butter in the top part of a double boiler over direct heat, then saute the mushrooms in it for 5 min.
Blend in the flour, salt, and pepper and place over boiling water.
Stir in broth and cream, and cook, stirring constantly until mixture thickens.
Add chicken and heat thoroughly.
Remove from heat and pour slowly over the egg yolks, while stirring constantly.
