Roast Chicken With Cheese Stuffing
|Butter||5 Ounce (155 Gram)|
|Chopped fresh herbs||2 Tablespoon|
|Parmesan cheese||4 Ounce, grated (125 Gram)|
|Fruit chutney||2 Tablespoon|
|Dried breadcrumbs||4 Ounce (125 Gram, Packaged)|
|Egg||1 , lightly beaten|
|Chicken||3 Pound (1.5 Kilogram)|
|Garlic||2 Clove (10 gm), crushed|
1. Preheat oven to 180°C (350°F/ Gas 4). Melt 90g (3oz) of butter in a saucepan. Stir in herbs, Parmesan, chutney and breadcrumbs, with enough of egg to bind. Stuff chicken with this mixture.
2. Melt remaining butter in clean pan; add garlic and brush mixture over chicken. Roast for 1 1/4-1 1/2 hours or until cooked through, basting occasionally.
