Super Summer Chicken
|Chickens||6 Pound, cut up (2 Whole, 3 Pound Each)|
|Fresh asparagus||2 Pound, cleaned and trimmed|
|Fresh mint leaves||1⁄2 Cup (8 tbs)|
|Garlic||1 Clove (5 gm)|
|Lemons||2 , thinly sliced|
|Butter||4 Tablespoon, cut into pieces|
Remove skin from chicken, if desired.
Arrange chicken pieces in a roasting pan or Dutch oven.
Lightly season with salt and pepper.
Arrange asparagus spears over chicken.
Mince mint and garlic; sprinkle over chicken and asparagus.
Arrange lemon slices over all.
Dot with butter.
Bake in a preheated 350-degree oven for 30 to 45 minutes, or until chicken is cooked through.
