Barbecued Oven Fried Chicken
|Fryer chicken||3 Pound, cut up and skinned|
|Crushed wheat crackers||1⁄2 Cup (8 tbs) (From About 35 Crackers)|
|Chili powder||1 Teaspoon|
|Garlic powder||1⁄2 Teaspoon|
|Dry mustard||1⁄4 Teaspoon|
|Celery seed||1⁄4 Teaspoon|
|Ground red pepper||1⁄8 Teaspoon|
|Barbecue sauce||1⁄4 Cup (4 tbs)|
Rinse chicken, then pat dry with paper towels.
Stir together crushed wafers and seasonings.
Brush each chicken piece with barbecue sauce; roll in crumb mixture to coat.
Arrange chicken, bone side down and so pieces don't touch, in a shallow baking pan.
Sprinkle with any remaining crumb mixture.
Bake in a 375° oven about 50 minutes or till chicken is tender and coating is crisp.
Do not turn.
