Grilled Chicken

Chicken Inasal is a Pinoy recipe that originated from the province of Bacolod City. This is characterized by it’s yellowish color and distinctive flavor.
Ingredients
  Whole chicken 1 , cut up into pieces
  Garlic head 1 , crushed
  Finely chopped ginger 1 (About The Size Of The Head Of The Garlic)
  Lemon zest 2 Tablespoon
  Lemon juice 1 Cup (16 tbs)
  Apple cider vinegar 1 Cup (16 tbs)
  Salt To Taste
  Pepper To Taste
  Butter 3⁄4 Cup (12 tbs)
  Annatto seeds 2 Tablespoon
Directions

Mix the garlic, ginger, lemon zest, lemon juice, apple cider vinegar, salt and pepper in a container.
Add the chicken and let it sit for no more than an hour.
In a saucepan, melt the butter.
Add the annatto seeds and set it aside.
Prepare the grill.
Grill the chicken pieces and baste it with the butter and annatto seeds mixture.
Grill until the chicken is cooked all the way through.
Serve with steamed rice.
