Chicken With Fresh Mushrooms

Ingredients
  Roasting chicken 20 Ounce (About Half A Medium Bird, 625 Gram, 1 Pound 4 Ounce)
  Soy sauce 2 Teaspoon
  Chopped ginger 1 Teaspoon
  Chopped onion 2 Teaspoon
  Salt 1 Pinch
  Sugar 1 Pinch
  Sherry 1 Tablespoon
  Button mushrooms 4 Ounce (125 Gram)
  Cooking oil 1 Tablespoon
Directions

Chop the chicken into bite-sized pieces and marinate with the soy sauce for 30 minutes.
Wipe or peel the mushrooms, but leave whole.
In a casserole heat 1 1/2 tablespoons of oil and stir-fry the onion and ginger for 30 seconds.
Add the chicken and stir-fry for another 30 seconds, then turn the heat down very low, cover and simmer for 15 minutes.
Add 2 teaspoons of oil and the rest of the ingredients, cover and cook very slowly for 25 minutes.
Check the seasoning and serve.
