Chicken with Fresh Mushrooms
|Roasting chicken||20 Ounce (About Half A Medium Bird, 625 Gram, 1 Pound 4 Ounce)|
|Soy sauce||2 Teaspoon|
|Chopped ginger||1 Teaspoon|
|Chopped onion||2 Teaspoon|
|Button mushrooms||4 Ounce (125 Gram)|
|Cooking oil||1 Tablespoon|
Chop the chicken into bite-sized pieces and marinate with the soy sauce for 30 minutes.
Wipe or peel the mushrooms, but leave whole.
In a casserole heat 1 1/2 tablespoons of oil and stir-fry the onion and ginger for 30 seconds.
Add the chicken and stir-fry for another 30 seconds, then turn the heat down very low, cover and simmer for 15 minutes.
Add 2 teaspoons of oil and the rest of the ingredients, cover and cook very slowly for 25 minutes.
Check the seasoning and serve.
