Chicken With Cashew Nuts

Ingredients
  Chicken 4 Ounce (125 Gram)
For marinade
  Egg white 2 Teaspoon
  Cornflour 2 Teaspoon
  Soy sauce 2 Teaspoon
  Chopped onion 1 Teaspoon
  Ginger slice 3
  Green pepper 1 Small
  Fresh chili 1
  Cashew nuts 2 Ounce (60 Grams)
For seasoning sauce
  Soy sauce 4 Teaspoon
  Sherry 2 Teaspoon
  Vinegar 1 Teaspoon
  Cornflour 1 Teaspoon
  Salt 1⁄4 Teaspoon
  Sugar 1⁄2 Teaspoon
  Water 1 1⁄2 Tablespoon
Directions

Cut the chicken into 3-cm (1 -in) cubes and marinate for 30 minutes.
De-seed the pepper and chilli; cut the pepper into 3-cm (1 -in) pieces and shred the chilli.
Gently fry the cashew nuts in 4 tablespoons of oil for 5 minutes until lightly browned, remove and drain.
Deep-fry the chicken cubes for 2 minutes, drain well.
Heat 1 tablespoon of oil and stir-fry the onion and ginger for 15 seconds.
Add the green pepper and chilli and fry for another 30 seconds.
Then add the chicken and seasoning sauce and stir while the sauce thickens.
Add the cashew nuts and serve.
