Spicy Honey Chicken

Spicy Sweet and Sour Chicken with Honey
Ingredients
  Chicken 500 Gram
  Spring onions 250 Gram, finely chopped
  Minced onions 6
  Ginger 4 Teaspoon
  Garlic paste 4 Teaspoon
  Vinegar 5 Teaspoon
  Dry red chilies 5 , soaked in water and ground into paste.
  Turmeric powder 2 Teaspoon
  Kahsmiri mirchi powder/Red chili powder 3 Teaspoon
  Garam masala powder 2 Teaspoon
  Tomatoes 4 Small, finely diced
  Pure honey 5 Teaspoon
  Hung yogurt 3 Teaspoon (Unsweetened)
  Mustard oil 2 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

Marination:
Wash chicken pieces well and keep them aside in a bowl.
Add dry red chili paste, vinegar, 2 tsp ginger garlic paste, Half of minced ginger, garlic paste, 3tsp mustard oil, salt, 1 tsp turmeric powder, 2 tsp Kashmiri Mirch powder and curd into the chicken bowl.
Mix well so that all the chicken pieces are well marinated.
Keep aside for 2 Hours

Cooking:
Heat mustard oil in a wok.
As soon as oil starts smoking add remaining minced onions, garlic paste, kashmiri chili powder, turmeric powder and finely chopped spring onions.
Stir fir the ingredients till well cooked ( check for oil seeping through the ingredients).
Add the marinated chicken pieces and the marinade.
Keep stirring for 15 minutes.
Add tomatoes, garam masala powder, remaining ginger paste, yogurt and pepper. Add little water if needed.
Stir for 10 minutes.
Add salt and cover the wok.
Cook for 20 minutes.
Add honey and stir to mix it well.
Serve hot with rice.

Story
The first dish I prepared after marriage was chicken (rather spicy honey chicken) Though, I would often cook chicken, this was one of those experiences, which I will probably remember all my life! I was extremely confident with my culinary skills (especially chicken dishes, because this is what I survived on mostly and prepared almost everyday), so when my mother-in-law, expressed her desire to have something cooked by me, I wasn’t nervous! It was just another chicken recipe for me. Was it so? Hmm...as I entered the kitchen, I wondered if this was a test for me! A practical test or on-the-spot test? I realized that I had to be careful with the measurements (specifically). Without getting tensed further and spoiling everything, I started chopping, marinating and getting the ingredients ready. My husband reminded me, that Mom isn’t fond of chilies or hot flavors – so better, stay out of it and not be experimental! Everything went on fine and I completed my chicken recipe well within time. Knowing my ways (tendency to hurry and go wrong with measurements), my husband decided to (‘test’) taste the chicken. I still remember his expression as he bit a small piece – red faced and gasping for breath! His fears were true – in my hurry, I went wrong with the measurements yet again, and this time with dry chili paste!! Now what?? Next ten minutes, I tried to remember every cooking tip from my mom and friends...last minute ways to save cooking mistakes. Just when I was about to give up (and call my husband), I noticed the honey jar on the countertop. I knew honey is a wonder ingredient...I just put a few teaspoons of honey in the chicken dish and stirred it well, to balance the spicy effect. It had done the trick...I couldn’t believe, I had just averted a cooking disaster. I quickly renamed it spicy honey chicken. My mom-in law was thrilled…she loved the spicy, yet not very hot taste of the chicken. Honey gave a wonderful glaze and amazing sweet sour and spicy taste to the chicken.
