Soy Sherry Chicken
|Onion||1 Small, halved|
|Broiler fryer chicken||3 Pound (1 In Number)|
|Soy sauce||1⁄4 Cup (4 tbs)|
|Dry sherry||1⁄4 Cup (4 tbs)|
|Fresh ginger slices||3 (1/8 Inch Thick)|
Place onion in cavity of chicken.
Brush skin with soy sauce and place chicken, breast up, in cooking bag.
Add sherry, any remaining soy sauce, and ginger to bag.
Close bag with string or rubber band.
Place on microproof baking dish.
Pierce bag near closure.
Insert temperature probe into thickest part of inner thigh parallel to leg.
Cook on 80 (reheat) set at 180°.
Let stand 10 minutes before serving.
Discard onion and ginger slices.
