Chicken In Wine Sauce With Bacon
|Bacon slices||4 , chopped|
|Carrots||1 Cup (16 tbs), cut into matchstick-thin strips|
|Onion mushroom soup and recipe mix||1 3⁄4 Ounce (1 Pouch)|
|Water||1 Cup (16 tbs)|
|Chablis/Other dry white wine||1⁄2 Cup (8 tbs)|
|Boneless skinless chicken breast halves||1 Pound (4 Pieces)|
1. Place bacon in 3-quart microwave-safe casserole. Cover with paper towel; microwave on high 3 minutes or until crisp, stirring once during cooking. Remove bacon to paper towels, reserving drippings in casserole.
2. Add carrots to drippings. Cover with lid; microwave on high 3 minutes or until carrots are tender. Stir in soup mix, water, wine and pepper until well blended.
3. Add chicken breasts, placing thicker portions toward edge of dish. Cover; microwave on high 10 minutes or until chicken is nearly done, rearranging chicken once during cooking. Let stand, covered, 5 minutes or until chicken is no longer pink in center. Sprinkle with reserved bacon.
