Spicy Oven "Fried" Chicken
|Plain dried bread crumbs||1 Cup (16 tbs)|
|Dried coriander||2 Tablespoon|
|Dried cumin||1 Tablespoon|
|Onion powder||1 Teaspoon|
|Garlic powder||1 Teaspoon|
|Cayenne pepper/Freshly ground black pepper to taste||1 Dash|
|Chicken legs||6 , rinsed and trimmed of fat|
|Chicken thighs||6 , rinsed and trimmed of fat|
Preheat oven to 375°.
Line roasting pan with aluminum foil.
In pie plate, combine first seven ingredients.
Beat egg whites in bowl and set aside.
Dip each piece of chicken in beaten egg white, let excess egg white drip off, then dredge in seasoned bread crumbs.
Arrange breaded chicken in roasting pan and bake 35 to 40 minutes, moving pieces once or twice during baking to prevent sticking.
