Chicken Breasts Supreme

Ingredients
  Finely chopped green onion 2 Tablespoon
  Butter/Margarine 2 Tablespoon
  Whole chicken breasts 2 Medium, skinned, halved lengthwise, and boned
  Fresh mushrooms/One jar of 2 1/2-ounce sliced mushrooms, drained 4 Ounce, sliced
  Salt 1⁄8 Teaspoon
  Pepper 1⁄8 Teaspoon
  All purpose flour 1 Tablespoon
  Dried rosemary 1⁄4 Teaspoon, crushed
  Light cream 3⁄4 Cup (12 tbs)
  Egg yolk 1 , beaten
  Dry white wine 1⁄4 Cup (4 tbs)
  Paprika To Taste
  Snipped parsley 1 Tablespoon
Directions

In skillet cook onion in butter or margarine for 2 minutes.
Add chicken breasts and mushrooms.
Cook over medium heat about 10 minutes or till chicken is done and lightly browned, turning once.
Remove to warm platter; sprinkle with salt and pepper.
Cover and keep warm.
Stir flour and rosemary into skillet drippings; add light cream.
Cook and stir till thickened and bubbly.
Gradually add half of the hot mixture to egg yolk.
Return mixture to pan; cook and stir over medium heat till thickened.
Stir in wine.
Pour over chicken.
Sprinkle with paprika and parsley.
