Orange Glazed Chicken
|Broiler fryer chicken||3 1⁄2 Pound, cut up|
|Orange marmalade||1⁄2 Cup (8 tbs)|
|Orange juice||1⁄4 Cup (4 tbs)|
|Packed brown sugar||2 Tablespoon|
|Lemon juice||2 Tablespoon|
1. Arrange chicken, skin sides up and thickest parts to outside edges, in rectangular dish, 11 x 7 x 1 1/2 inches. Cover with waxed paper and microwave on high 15 minutes; drain, reserving juices.
2. Pare orange; cut into 1/4-inch slices. Cut each slice into fourths.
3. Mix remaining ingredients in 4-cup measure until well blended. Stir in juices from chicken. Microwave uncovered on high 4 minutes 30 seconds to 5 minutes, stirring every minute, until mixture thickens and boils. Stir in orange.
4. Spoon orange mixture over chicken in dish. Cover with waxed paper and microwave on high 10 to 15 minutes or until juices run clear. Garnish with parsley if desired.
