Orange Baked Chicken
|Eggs||2 , beaten|
|Orange juice||6 Tablespoon|
|Fresh breadcrumbs||2 Ounce (50 Gram)|
|Grated orange rind||1 1⁄2 Teaspoon|
|Butter||3 Ounce, melted (15 Gram)|
|Orange wedges||4 (For Garnish)|
|Watercress||1 Tablespoon (For Garnish)|
Mix together the eggs and orange juice in a shallow dish.
Combine the breadcrumbs, orange rind, paprika and salt and pepper to taste on a sheet of greaseproof paper.
Dip the chicken quarters in the egg mixture, then coat with the breadcrumb mixture.
Pour half the melted butter into a roasting pan.
Arrange the chicken quarters in the pan in one layer and drizzle over the remaining butter.
Bake in a preheated moderately hot oven, 190°C (375°F), Gas Mark 5, for 1 hour or until the chicken is cooked through, turning the chicken quarters halfway through cooking.
Serve garnished with orange wedges and watercress.
