Lemon Herb Grilled Chicken
|Broiler fryer chicken||3 1⁄2 Pound, cut up|
|Olive oil/Vegetable oil||1⁄3 Cup (5.33 tbs)|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Chopped basil/1 teaspoon dried basil||1 Tablespoon|
|Chopped thyme/1/2 teaspoon dried thyme||2 Teaspoon|
|Ground pepper||1⁄4 Teaspoon|
|Garlic||2 Clove (10 gm), crushed|
1. Arrange chicken, skin sides up and thickest parts to outside edges, in rectangular dish, 11 x 7 x 1 1/2 inches. Shake remaining ingredients in tightly covered container; pour over chicken. Turn chicken to coat well. Cover and refrigerate at least 3 hours.
2. Prepare charcoal fire for grilling. Microwave chicken and marinade tightly covered on high 8 to 10 minutes or until outside edges of chicken begin to cook.
3. Place chicken, skin sides down, 5 to 6 inches from medium coals, on grill; reserve marinade. Cover and grill chicken 10 minutes; turn. Cover and grill 10 to 15 minutes longer, brushing occasionally with marinade, until juices run clear.
