Curried Chicken And Rice

Ingredients
  Broiler fryer chicken 3 Pound, cut up (1 Chicken, 2 1/2 To 3 Pound)
  Water 2 1⁄2 Cup (40 tbs)
  Onion 1 Medium, chopped
  Curry powder 1 Tablespoon
  Long grain rice 1 1⁄4 Cup (20 tbs)
  Snipped dried apricots 1⁄4 Cup (4 tbs)
  Instant chicken bouillon granules 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Peanuts/Cashews 1⁄4 Cup (4 tbs)
  Paprika To Taste
Directions

Sprinkle chicken pieces lightly with salt and pepper.
In wok combine chicken, water, onion, and curry powder.
Bring to boiling; reduce heat.
Cover and simmer 20 minutes.
Skim excess fat from cooking liquid.
Stir rice, apricots, chicken bouillon granules, and salt into chicken in wok.
Return to boiling.
Reduce heat; cover and simmer 20 minutes more or till rice and chicken are done.
Sprinkle with peanuts or cashews and paprika.
