Curried Chicken And Rice
|Broiler fryer chicken||3 Pound, cut up (1 Chicken, 2 1/2 To 3 Pound)|
|Water||2 1⁄2 Cup (40 tbs)|
|Onion||1 Medium, chopped|
|Curry powder||1 Tablespoon|
|Long grain rice||1 1⁄4 Cup (20 tbs)|
|Snipped dried apricots||1⁄4 Cup (4 tbs)|
|Instant chicken bouillon granules||1 Teaspoon|
|Peanuts/Cashews||1⁄4 Cup (4 tbs)|
Sprinkle chicken pieces lightly with salt and pepper.
In wok combine chicken, water, onion, and curry powder.
Bring to boiling; reduce heat.
Cover and simmer 20 minutes.
Skim excess fat from cooking liquid.
Stir rice, apricots, chicken bouillon granules, and salt into chicken in wok.
Return to boiling.
Reduce heat; cover and simmer 20 minutes more or till rice and chicken are done.
Sprinkle with peanuts or cashews and paprika.
